2 cup mayonnaise 2 tbsp lemon juice 2 tsp Worcestershire 2 clove of garlic (minced) 1/2 tsp salt 1/4 tsp pepper 1 c Parmesan cheese 2 tbsp of milk Mix all ingredients together and shake or whisk until well blended. Preparing the chicken: Cut up 2 boneless, skinless chicken breasts into cubes. Place 1/4 of the dressing (above recipe) in a ziplock and marinade the cut upchicken in it, for an hour. Skewer the chicken pieces and grill. Turn frequently and baste. In a large bowl, toss Romaine with dressing. Serve and top with a skewer of chicken and grate fresh Parmesan over top of all. My daughter makes some wonderful garlic bread to go with this. She slices Italian bread and broils on low. When toasty brown, she spreads olive oil on top and rubs with a fresh garlic clove. |
