What's For Dinner At Our House - Beef Enchiladas
This is a really easy dish to prepare and delicious with either shredded chicken or beef. Try it out, you won't be disappointed! My daughter and I made these tonight. They are one of my husband's favorite meals.
Beef Enchiladas
Ingredients: Flour tortillas
1 to 2 lbs. ground beef
3 cans enchilada sauce
12 oz. Four cheese Mexican cheeses, shredded
taco seasoning packet
• Brown grown beef with onion.
• Drain fat and add taco seasoning packet & 1/4 cup water to beef, set aside.
• Add enchilada sauce to bottom of 9 x 13 pan or baking dish, just enough to cover the bottom
• Add rest of enchilada sauce to a deep frying pan and warm over low heat.
• Dip a tortilla in the warm enchilada sauce, coating both sides.
• Add a row of the ground beef to the center, top with some of the shredded cheese and fold each side in.
• Set in 9 x 13 pan, Repeat.
• When done filling tortillas, pour the remainder of the warmed enchilada sauce over top.
• Top with the shredded cheese, Bake at 350 for 30 minutes uncovered.
Serve with sour cream. You can also leave the onions out and just set out bowls with onions, chopped tomatoes, black olives and jalapenos for each person to top their own.

Bringing the Children closer to Jesus
Attending Sunday School once a week just isn't enough. We have to reinforce what they learn and need to know, in our daily living, in prayer, in reading to them, in they way we act, talk and dress, in devotion time, in every choice we make. We are their most important examples of someone who is close to Jesus!

Today's Devotional - Bring Them To Jesus
The Scripture reading from Luke 18 about children seemed unusual at the memorial service for David Holquist. After all, he was 77 when he died.
Yet, the pastor said the verses fit David, a long-time college professor, perfectly. Part of his legacy was that he took time for children - his own and others'. He made balloon animals and puppets, and helped in a puppet ministry at church. When planning worship services with others, he frequently asked, "What about the children?" He was concerned about what would help the children - not just the adults - to worship God.
Luke 18 shows us the concern Jesus had for children. When people brought little ones to Him, the disciples wanted to protect Jesus, a busy man, from the bothersome children. But it seems that Jesus was not at all bothered by them. Just the opposite. The Bible says that Jesus was "greatly displeased" at the disciples, and said, "Let the little children come to Me, and do not forbid them" (v16). Mark adds that Jesus took them in His arms and blessed them (10:14-16).
Let's examine our own attitude about children and then follow the example of David Holquist. Find some ways to help them come to Jesus.

Simple and Affordable Fun!
It's almost summer time, but we're still enjoying all that spring brings.
Here are a few ideas for some simple and affordable Springtime fun!

Puddle Jumping - We still have a rainy day here & there are plenty of puddles to be had. The kids see the puddle, a big smile creeps across their faces, they look up at me with hopeful eyes and I nod yes. Oh, the joy! They run, they jump and splash and giggle, with not a worry in the world. It lifts my spirits just to watch!
Bird watching - This is the perfect time to do some bird watching. If
you don't have a bird book, check one out at the library. The kids like for us to take pictures of each new bird that we discover. The regular visitors to our bird feeders are: Blue Jay, Cardinal, Nuthatch, Wren, Grackle, Dove and Robins in our yard. We also have a purple finch that has nested here at our house. Garden Fun - With little cost and effort, you can grow a garden of
your own. We were delighted on a recent trip to the Dollar Tree, where we found flower and veggie seed packets (4 for $1) and supplies like a plastic shovel, watering can, bug catcher and colorful yard pinwheels for $1. My children chose Asters, a wildflower mix and Sunflowers. We'll see if they grow!
Fresh Flowers - Bring Spring In! We like to take leisurely drives
through the country and we've been stopping to pick many beautiful wildflowers for our home. They brighten up every room. My husband picked me a bunch of Buttercups the other day. Gorgeous! My kids now know that by holding a Buttercup under your chin, that the yellow glow means they like butter. They've been testing everyone out!
Another treat was the patch of Lilies of the Valley near our church. I picked a few and my kitchen smelled heavenly for the next week.
Running out of vases? We bought a few decorative plastic cups the other day from Walmart, that were on clearance for $1.50 each. They work great as a vase!

Today's Devotional
Following Our Example
Alyssa, who is 6 and just learning to read, often saw her parents and grandparents reading their Bibles in the morning. Early one day, she woke up before everyone else. Grandma found her sitting on the couch, with her Bible and a devotional booklet on her lap. She wanted to follow the example of spending time with God at the beginning of the day.
Timothy, a young pastor, faced heavy responsibilities in the church at Ephesus - training believers, leading in worship, countering false doctrine. The older, experienced apostle Paul gave him instruction on leading the church in these areas, but he also mentioned the importance of personal conduct. He said, "Be an example to the believers in word, in conduct, in love, in spirit, in faith, in purity" (1 Tim 4:12).
Paul challenged Timothy: "Take heed to yourself and to the doctrine" (v16). If he paid attention to his own spiritual life and to solid doctrine, he would be a godly example to the church family.
We all have others who are observing us. Even little Alyssa has younger siblings watching her. Let's live our lives in such a way that those who follow our example will help others in their walk with God.

What's For Dinner At Our House
Broccoli Soup and Ham & Cheese Sandwiches
(from FoodNetwork.com) Ingredients
- 2 tablespoons butter
- 1/2 cup cream, heavy, light or
- 1 onion, chopped
- half-n-half
- 1 russet potato, peeled and chop
- Nutmeg, to taste
- 6 cups canned chicken stock warmed
- Salt
- 3 cups chopped broccoli florets and stems
- Pepper
Directions
In a large pot, melt butter and cook onion until tender over medium high heat. Add potato and toss to coat with butter. Add hot stock and bring to a simmer. Stir in broccoli and return to a simmer. When potato and broccoli are tender, puree in batches in a blender or food processor. Return to pot and add cream. Season to taste and serve warm.
Sandwiches - We made ham, cajun turkey & swiss cheese sandwiches and toasted to melt the cheese.
